Easy Recipes from Grandma: Curried Sausages

Think Grandma’s recipes were too complicated? 
Not at all. 
In this new series we will give you some recipes full of flavour and without the hassle:  
Curried Sausages
2 tblsp canola oil
8 beef sausages (I prefer the thick ones because they absorb more of the curry flavour)
1 large brown onion sliced
2 tsp curry powder
1/2 cup chicken stock
1 cup water
¾ cup frozen peas
1 tbsp cornflour
2 tbsp water
Heat oil in a heavy base frypan or saucepan (big enough to fit the sausages before slicing)
Add the sausages and cook just enough to seal (about 1-2 minutes depending whether you are using thick or thin ones)
Remove sausages
Add onion and curry powder. Cook until onion is tender
Slice sausages and add to pan. (I prefer a diagonal cut so more flavour is absorbed into the meat.)
Cover with stock and water. Gently bring to the boil then turn to a low simmer. Simmer for about 15 mins, add peas and cook until peas are done.
Combine cornflour and water to form a paste. Bring sausages to boil add past to thicken.
Service boiled rice or noodles.
Note: all ingredients can be adjusted according to taste
